Search Engine Optimisation: what is it and why should I care?

Search Engine Optimisation is as ubiquitous and puzzling a term as APR, and potentially as fiddly and difficult as making puff pastry.  So why bother to give yourself a new headache when you don't need to?  Well, its a bit like arranging a party but forgetting to tell people the address, or worse still, organising a fundraiser that nobody knows about.  Or building a website that nobody visits.

So what is Search Engines Optimisation? Search engines are very familiar to us now - its Google and Yahoo and Bing and all those other ones like Mamma or Ask Jeeves.  We type in what we want to know, and Hey Presto! they come up with someone who knows the answer.  So how do they do that?  And more to the point, how can you make them come up with your website as the answer?  Search Engine Optimisation is about doing just that.
